Halloumi (cut into chunks)

PREPARATION

Cut all your vegetables and halloumi into chunks that will fit nicely onto your skewers - about 3/4 of an inch If you want to get precise, would be perfect.

Using a pestle and mortar if you have one, pound the thyme, garlic and chopped chilli, salt and pepper.
|
|

Add the lemon juice (bit of the zest too if you like a tang) and olive oil, mix to a paste. You can also use a blender to make the paste.
|
|

Put all the veggies and halloumi into a large mixing bowl.
|
|
5.
|
Pour the paste over and leave to marinade for ½ hour or longer.
|
|
6.
|
Skewer up and grill on a nice on BBQ or griddle pan for 5 – 6 minutes or until the halloumi is just beginning to go soft and gooey.
