PREPARATION
1. Mix all the dressing ingredients and set aside.
2. Season the sirloin steaks with salt and pepper.
3. Heat a large grill pan/skillet over high heat until hot.
4. Cook the sirloin steaks to your liking.
5. Turn each steak once using a tong.
6. Remove the steaks from the skillet, and let it rest for about 5 minutes before serving.
7. To make the beef salad: Slice the steak into thin strips.
8. In a medium or large mixing bowl, add some lemongrass, shallots, mint leaves, scallions, coriander, cucumber, tomatoes, and the grilled beef.
9. Mix in a couple tablespoon of the dressing, toss and mix well.
10. Add some lettuce leaves on a serving plate, the beef mixture, peanuts, and garnish with mint leaves and kaffir lime leaves.
11. Spoon some of the dressing, if desired.
12. Serve immediately.
